Homemade kaya

New experiment with the breadmaker! The breadmaker comes with a jam making function, but instead of making jam, I made kaya, a custard-like spread made of coconut milk, eggs, sugar and pandan leaves. Making kaya became so easy peasy, just throw everything in and set to jam function, and voila! Homemade kaya in an hour's time! This can also be made bain-marie style, but that would take a good 4 hours! The good thing about homemade spreads for bread? I get to control what and how much goes into the stuff.

I did a taste test, and the light hint of coconut milk and aromatic fragrance of pandan leaves left me feeling like I just tasted a little of heaven! Needless to say, the bread below is homemade too.

I've been reading your blog for months, but I just HAD to comment on this post.
I'm from Canada but I visited Hong Kong in 2007 and got to try Hong Kong-style French Toast. It was two slices of egg-dipped bread, kaya in between, and then all sealed up with frothy egg whites. So goood!
One of my illicit souvenirs from Hong Kong was a jar of Kaya. I never learned how to make Hong Kong-style French Toast though so my jar eventually went to waste.
Seeing your post though made me want to attempt Hong Kong-style French Toast again. Do you by any chance know where I can find a recipe/tutorial for it? (And I guess that would include a recipe/tutorial for kaya as well.)
Thanks (even if you have no clue what I am talking about)!

Hi Bronwyn,

look what I found: http://chowhound.chow.com/topics/358698

Are you anywhere near the places they are talking about? Maybe they sell the Hong Kong french toast and you get a quick fix before attempting your own toast. :)

Found this too, but ain't sure if this is what you're looking for: http://happyhomemaker88.wordpress.com/2007/09/19/hong-kong-style-french-toast/

As for kaya, I found the recipe here: http://thelazychef.wordpress.com/2006/09/02/nonya-kaya/

Hope I helped!
